Weekly Recipe – Chocolate Coconut Hemp Bars

These healthy protein bars are super easy to make plus with 12 grams of protein, they are a great energy boost and/or meal replacement especially when you’re on the go! Best of all, they don’t need to stay refrigerated so you can take them with you without worrying they will melt and/or fall apart.

 

 

Chocolate Coconut Hemp Bars

Ingredients

  • 1 cup hemp hearts
  • 1 1/3 c. toasted coconut
  • 1 cup nut butter (I used a mix of almond and peanut butters)
  • 1/4 cup coconut nectar (or honey)
  • 2-3 tbs dark chocolate chips

Directions

  1. Heat oven to 325 and bake coconut for 5-10 mins or until golden brown
  2. While coconut is toasting, mix other ingredients
  3. Add coconut once cooled
  4. Press firmly into a oil 8 x 8 baking pan or line with wax paper
  5. Melt chocolate chips (you can use a chocolate bar and I added a little bit of coconut oil to thin and make easier to spread)
  6. Spread over the coconut/hemp/nut butter mix and either place in freezer (or fridge) until hardened
  7. Cut into 10-12 bars
