Weekly Recipe – Granola with Hemp Hearts, Chia and Flax Seeds

Granola is an easy food to make at home which allows you the freedom to add your favorite ingredients, like hemp hearts! This recipe isn’t super sweet, though by using honey or corn syrup in place of the coconut nectar, you can sweeten it up. I used the spices I love but you can change those to your taste as well. The same is true for the oil you use. If you prefer something other than coconut oil, choose an oil that’s flavor is as neutral as possible. If you want to add dried fruit, do so once granola is done to avoid it drying out too much in the oven.

Granola with Hemp Hearts, Chia and Flax Seeds

I highly recommend using organic ingredients whenever possible!

2 cups oats

½ cup hemp hearts

¼ cup ground flax seeds (I have whole seeds that I grind as needed)

¼ cup chia seeds

½ tsp sea salt

½ tsp cinnamon

½ tsp all spice

½ tsp ground ginger

¼ cup coconut oil (liquefied)

¼ cup + 1 TBS coconut nectar or other liquid sweetener

1 TBS vanilla extract

Mix dry ingredients well in large bowl

Combine liquid ingredients separately, mixing well

Add liquids to dry ingredients and mix well

Let mixture sit for 5 minutes to meld

Spread mixture onto parchment lined baking sheet and toast for approximately 45 minutes at 300˚F … gently stir every 15 minutes. Granola will still be slightly moist when removed from oven but will dry as it cools. Allow it to cool completely before storing in an airtight jar for up to a week (if it lasts that long!)
