High Protein Hemp Pasta Salad

With all of the summer veggies and fresh mushrooms available, I thought a hemp pasta made sense this time of year. Feel free to sub any veggies you have and add cheese). I also used a high protein, gluten free vegetable pasta but suggest using your favorite. 


4 cups cooked organic gluten free pasta (I used Cybele’s Free to Eat Rotini)

1 cup organic hemp hearts

1/2 cup fresh cut green beans – blanched

1/2 cup fresh sugar snap peas

1/2 cup sauteed (and cooled) chanterelle mushrooms

1/2 cup fresh arugula

1/2 cup fresh basil

1/2 cup cherry tomatoes

8 tbs Bragg’s Tuscan Kale Vinaigrette (or any vinaigrette of your choice)


Toss all and enjoy!
