New Mexican Hemp Taco Filling
This filling is so delicious and versatile. I usually make up a batch and freeze what I don’t use. Then it’s ready to go next time I want to make tacos, burritos, nachos or just have a yummy crumble for my salad.
Ingredients:

1.5 cups hemp hearts

1 can of refried beans

5 TBSP chopped green chili

1/2 cup chopped almonds

1 cup cooked quinoa

taco seasoning to taste
Makes 8 servings
Blend the refried beans, green chili, and garlic and set aside. Separately blend the almonds, hemp hearts, quinoa and seasoning. Combine with bean mix in large bowl.
Line a baking sheet with parchment paper and spread mixture as thinly as possible on baking sheet. Bake for 30 minutes ate 350˚F. Crumble mixture into a bowl. Serve on tortillas with vegan cheese (or dairy), lettuce, salsa, etc.
